What Is Resistant Starch (RS4)? Functional Dietary Fiber for Food Manufacturers

As U.S. food brands formulate for higher dietary fiber, lower net carbohydrates, and better glycemic profiles, resistant starch has become one of the most versatile functional ingredients in commercial baking, pasta, and snack manufacturing.

What Is Resistant Starch?

Resistant starch is starch that resists enzymatic hydrolysis by alpha-amylase in the human small intestine and passes intact into the large intestine, where it functions physiologically as a prebiotic dietary fiber.

The Four Types of Resistant Starch (RS1 to RS4)

  • **RS1:** Physically inaccessible starch trapped within whole or partly milled grains and seeds.
  • **RS2:** Uncooked native starch granules with a crystalline structure (such as raw green banana or high-amylose corn starch) that often lose their resistance when heated above gelatinization temperatures.
  • **RS3:** Retrograded starch formed when cooked starch (such as cooked and cooled potatoes or rice) recrystallizes.
  • **RS4 (Cross-Linked Resistant Starch):** Chemically modified starch—such as distarch phosphate (E1412) or phosphated distarch phosphate (E1413)—specifically cross-linked to resist digestion even after high-heat baking, extrusion, or cooking.

Why Commercial Bakers Choose Type 4 Resistant Tapioca Starch (E1413)

Angel Starch manufactures **Angel RS 3700 TS ULV3 (E1413)**, a Type 4 resistant tapioca starch engineered for commercial food processing:

  • **Process & Heat Stability:** Unlike RS2 grades that can gelatinize and become digestible during baking, RS4 retains its dietary fiber structure through bread baking, waffle irons, and pasta extrusion.
  • **Low Water Absorption & Easy Dough Handling:** Replaces flour carbohydrates in keto breads, cakes, muffins, brownies, and pasta without making doughs stiff or gummy.
  • **Fine White Appearance & Neutral Taste:** Avoids the dark specks, gritty mouthfeel, and bitter notes of cereal brans.

For liquid or soluble fiber applications (such as gummies, beverages, and nutrition bars), formulators also pair RS4 with **Angel Resdextrin** (soluble tapioca fiber powder) and **Angel Resfibre** (soluble tapioca fiber syrup).
