    How do I choose the right starch for my food formulation?

    Start with the performance you need from the finished product. Factors such as thickening, viscosity, binding, texture, heat resistance, freeze-thaw stability and moisture control can determine whether tapioca, potato, corn or a functional modified starch is the better choice.     What is the difference between native starch, modified food starch and clean-label starch?

    Native starch retains the natural functional characteristics of its plant source. Modified food starch is treated to provide specific performance characteristics for food processing; U.S. regulations recognize "food starch-modified" as a regulated ingredient designation. Clean-label starches are typically selected when manufacturers want functional performance together with a simpler ingredient declaration.

    Is tapioca starch suitable for gluten-free food products?

    Tapioca starch is derived from cassava rather than wheat, rye or barley, making it useful in many gluten-free formulations. However, a finished product carrying a "gluten-free" claim in the United States must meet FDA requirements, including less than 20 ppm gluten and applicable ingredient and cross-contact requirements.

    Is modified food starch the same as genetically modified starch?

    No. The word "modified" in modified food starch refers to changing the starch to achieve particular functional properties; it does not itself mean that the crop was genetically engineered. In the U.S., modified food starch is regulated for food use, and labeling requirements apply to the ingredient.
